A simple and vibrant Italian salad with a fresh twist.

Ingredients
  • A couple of slices of fresh bread
  • Olive oil
  • 1 cucumber
  • 2 medium ripe tomatoes
  • 1 tsp capers
  • A handful of fresh basil leaves
  • Sea salt
  • Vinegar (preferably red wine, white, or rice vinegar — something mild)
  • ¾ of a can of tuna in chunks

Tear or slice the bread into small pieces, drizzle with olive oil, and toast in the oven until lightly golden. Dice the cucumber and tomatoes, then place them in a large bowl. Add capers and whole basil leaves, season with sea salt, and drizzle with olive oil and a splash of vinegar. Add the tuna and toasted bread. Toss gently until everything is well coated in the dressing.
