- 250 g salmon
- salt and freshly ground black pepper

- a few sprigs of green onion
- 1 large grapefruit
- 1 avocado
- sprouts (pea, sunflower, soy – to taste)
- lime juice or a bit of lemon juice
Cut the salmon into cubes, drizzle with olive oil, and season with salt, pepper, and part of the chopped green onion. Preheat the oven to 200°C and bake for 10 minutes.
Peel and slice the avocado and grapefruit, removing the membranes (the citrus can also be segmented, ensuring all membranes are removed). Mix with the sprouts and the remaining green onion. Drizzle with olive oil and lime juice, season with salt, and top with the baked salmon before serving.
