Salads as a main course — no frills, ready in under 15 minutes. I love this seasonal favorite.

Ingredients
2 servings
  • 2 large handfuls of green beans
  • a large bunch of cilantro
  • 1/3 chili pepper
  • 2 tbsp. tahini
  • olive oil
  • juice of 1/2 lemon
  • 1 avocado

Wash the green beans and cook them to al dente or blanch them in boiling water for 60 seconds using a colander. Cut into 3–4 cm pieces. Dice the avocado, chop the cilantro, and combine with the beans. Season with salt, then dress with tahini, olive oil, lemon juice, and chopped chili.
