A few fresh greens, a quick dressing — dinner is ready in just 5 minutes.

Ingredients
  • 1 avocado
  • 1 small jar of shrimp
  • lettuce leaves (basic iceberg or romaine work, but go for something more flavorful — frisée, chicory, or spinach for more taste)
  • juice of half a lemon
  • green onion
  • the most aromatic oil — sesame, nut-based, or truffle oil
  • for topping — sesame seeds or pine nuts

Peel the avocado and remove the pit. Slice it into strips or cubes. Chop or tear the lettuce into bite-sized pieces. Quickly boil or lightly sauté the shrimp in a pan. Finely chop the green onion.

Combine the lettuce, avocado, and shrimp in a bowl. Drizzle with lemon juice, sprinkle with sesame seeds or pine nuts if desired, and dress with your chosen aromatic oil. Serve immediately.
