As simple as it gets. A quick dinner.
- 1 wheel of Camembert or Brie (Brie usually has a lower fat content)
- a large bunch of spinach
- fresh herbs (dill, parsley, mint, or cilantro)
- tomato
- olive oil
- red wine vinegar or apple cider vinegar
- a bit of mild mustard
- salt
- freshly ground black pepper
- flaxseeds, pumpkin seeds, or sesame seeds
Wash and dry the spinach and aromatic herbs (I usually use whatever is available, up to 5–6 types at once). Slice the tomato.
Bake the Camembert (or Brie, or even Halloumi) in the oven at 150°C on a parchment-lined baking sheet. Watch closely, as the baking time depends on the fat content of the cheese. It shouldn't melt completely and spread out, but should become soft and gooey inside.
In a small jar, mix olive oil and vinegar at a 3:1 ratio, add about ½-1 tsp. of mild mustard, salt, and black pepper. Shake well until fully combined. Dress the spinach and tomato, tossing them gently.
Place the warm cheese on top. Sprinkle with sesame seeds and/or raw pumpkin seeds.
The cheese can also be grilled on a grill pan. Instead of Camembert, you can use Brie, as shown in the photo below (both cheeses are on the salad). If desired, you can add sweet pepper, cucumber, apple, or green mango, as well as sprouts.
