Fruits

Baking fruits beautifully enhances their natural sweetness. Choose firm, ripe fruits. Large fruits can be used as little baskets for fillings. The classic option is apples. Slightly prick or score the skin around the entire circumference (you can also make a full equatorial cut), and carefully remove the core. Inside, you can pour a bit of honey and sprinkle with cinnamon. Or place a piece of butter, sprinkle with sugar, and add chopped nuts (pistachios, almonds, or pine nuts). Peaches, apricots, or large plums also bake wonderfully and work well as baskets. Cut them in half and remove the pit. For the filling, you can use walnuts (or any other nuts) with honey. You can also mix some cottage cheese with egg yolk, add nuts or dried fruits, and some people even add chocolate slices and serve it with ice cream.

Vegetables

Most vegetables can be baked in the oven. Root vegetables and tubers (like potatoes) are best baked with their skin on. Zucchini and eggplants also work well. You can bake them whole or cut into large pieces. Toss with vegetable oil and spices, and flip them 1-2 times while baking. For crispy skin, wash and dry the potatoes, then brush with olive oil.

Beets should not be peeled. Just wash them, dry them, and wrap them in foil. This baked beetroot can replace boiled beets in vinaigrette and other salads. I’ve already shared a recipe for a mix of vegetables baked with herbs. And don’t forget, baking is the best way to make eggplant caviar — now is the perfect time!
