Ingredients
  • 500 ml of vegetable milk (soya+coconut ideal)
  • 2 eggs
  • 200 g of flour (you can whole wheat, with the exclusion of gluten, replace it with bob's red mill gluten free flour, you can corn starch, always 50/50 with sesame, almond or coconut flour)
  • 100 g spinach
  • pinch of salt
  • 1 tbsp. olive oil

Mix all ingredients in a blender and beat until smooth. Fry in a dry frying pan (or a small amount of olive/melted butter or coconut oil). The whole recipe, perfect, right?

Pancakes are perfectly combined with salted fish and caviar, sour cream and eggs in fried form or in the form of a scramble.
