  • leek (half a stalk, thinly sliced)

  • sauerkraut
  • turmeric (about ½ tsp)

Heat the oil and toast the caraway seeds until fragrant. Add the sliced leek and sauté gently until softened. Then add the mushrooms and sauerkraut, mix well, and braise over medium heat for about 20 minutes, until everything becomes tender and the flavors combine. Towards the end, stir in turmeric to taste and mix again. Optionally, add good-quality protein to make the dish more filling and suitable as a main course.
