An instant and perfect summer side dish with fresh peas, or enjoy the softest and greenest version using frozen peas in winter.

Ingredients
  • 2 cups green peas (fresh or frozen)
  • 1/2 stalk of leeks (use the white, light green, and even the dark green parts usually discarded—they work wonderfully!)
  • 3 tbsp. olive oil
  • 1 tsp. butter
  • salt

Finely chop the leek. Heat the butter and olive oil in a skillet until melted and combined. Add the leek and sauté for 2–4 minutes until softened. Add the peas and cook for another 5–8 minutes, stirring occasionally, until tender. Turn off the heat, season with salt, and lightly mash the peas with a spatula.
