I love this recipe. It turns out to be a tasty and healthy side dish.

Ingredients
  • A glass of beans (soak overnight; if there is no time — pour boiling water, let stand for 15 minutes, drain the water and repeat again)
  • Herbs: 2 sprigs of rosemary, 1 bay leaf, thyme or marjoram
  • 1 tomato
  • 3 cloves garlic
  • 1 potato (peeled)
  • Olive oil
  • Sea salt and freshly ground black pepper

Put all the ingredients in a saucepan, cover with water, and put on the fire. Do not salt the beans before they are ready. When the water boils, remove the foam and leave to cook over medium heat. Depending on the variety of beans, after 30-45 minutes it should be ready — try. If the beans are firm, allow some more time to cook. When the beans are soft, drain the water, and the herbs can be thrown away.

Pour olive oil into a separate bowl, add salt and pepper, and put potatoes, tomato (peeled) and garlic there. Stir all the ingredients with a spoon in the puree and mix with the beans. To your taste, you can sprinkle with balsamic vinegar or vinegar on herbs.
