Let’s take the simplest recipe, a Mexican one, signaled by spices — paprika, cumin, and salsa.
- 1 sweet pepper
- 1 red onion
- 2 chicken breasts (or any other boneless poultry)
- 1 tsp. paprika
- a pinch of cumin
- 1/2 lime
- olive oil
- sea salt and freshly ground black pepper
for salsa:
- 1/2 fresh chili
- 1 tomato
- olive oil
- a small bunch of cilantro
- lime
- salt and pepper
Clean the pepper of seeds and slice into strips. Slice the onion into half rings and cut the chicken into strips of similar size as the pepper. Place everything into a bowl, sprinkle with paprika and ground cumin. Squeeze in the juice of half a lime, drizzle with olive oil, season with salt and pepper.
For the salsa, finely chop the chili (without seeds), dice the tomato, and chop the cilantro leaves and stems. Season with salt and pepper, and squeeze in the juice of one lime.
Grill everything on a grill pan (or a regular pan if you don’t have one) for 6–8 minutes, until the vegetables and chicken are slightly browned.
Fill tortillas (either wheat or corn) if available, or use thin lavash. Serve with salsa, and guacamole if you wish :)
