  • 200g raspberries
  • 200g blueberries
  • 150ml apple juice
  • 2 tbsp sugar
  • 350ml semi-dry sparkling wine (or champagne)
  • 4 sheets of leaf gelatin

Begin by evenly dividing the washed berries among four dessert glasses or molds. Chill for 15 minutes to help the jelly set faster.

Meanwhile, soak the gelatin sheets in 500ml cold water for 10 minutes. In a small saucepan, warm the apple juice with sugar (do not boil). Add the softened gelatin and stir until completely dissolved.

Gently pour 350ml chilled champagne into the syrup—the total liquid should measure about 500ml. Using cold champagne ensures quick setting and preserves the bubbles in the finished dessert.

Pour the jelly mixture over the berries and refrigerate immediately for at least 1 hour to set.

For serving, garnish with fresh mint leaves or a dusting of powdered sugar. This elegant combination of seasonal berries, champagne, and silky jelly delivers a summery sophistication that will impress any guest.
