On a winter morning, breakfast calls for something hearty. Sometimes it might be shakshuka with shrimp, but today, it’s even simpler. Just one squid, even frozen, and a couple of spices make for a delightful breakfast.
- 2 eggs
- 1 shallot
- 4 cloves of garlic
- 1 cm chili pepper or pinch of dry chili
- a pinch of dry garlic
- 1 squid
- fresh carrots
- kimchi
- flaxseed crackers
Place the squid in water for quick defrosting (5–10 minutes is enough if frozen). Rinse, pat dry with a paper towel, and slice thinly.
Heat olive oil in a pan. Add the sliced shallot, garlic, and chili. After 40 seconds, add the squid and cook together for 1–2 minutes. Crack in the eggs and cook until the yolks are slightly runny. Season with salt and pepper. Carefully plate and serve with fresh vegetables.
