
Charlottes are tasty, simple, and endlessly versatile. This one was just an improvisation with fillings — and it turned out delicious.
- 3 eggs
- 7 full tablespoons of sugar
- 1 cup flour
- 2 apples
- 1 pear
- 4 dates
- 1 tsp. butter
- 1/2 tsp. baking powder
Beat the eggs with sugar and butter until smooth. Add the flour and baking powder, then beat again. The batter should be thick, stretchy, and sweet.
Pour half of the batter into a baking dish, layer with chopped apples, pear, and pitted chopped dates, then cover with the remaining batter. Bake at 160°C for about 30–35 minutes. When the crust is golden, test with a toothpick: if it comes out clean, the charlotte is ready.
