Walnuts are one of the most affordable and coolest snacks. First, they have fundamental health benefits. The fats contained in nuts are a great foundation for regulating the feeling of hunger. This is the foundation for building hormones, from thyroid to sex and metabolic hormones, which shape the entire metabolism as a whole. Secondly, if you want something sweet, it is always better to start with nuts, as they inhibit the feeling of hunger.
- 200 g Walnuts
- Fresh or dry sage (thyme, rosemary, oregano are also suitable)
- Olive oil
- Salt
Heat a pan with olive oil, then reduce the heat to medium-low. Add a pinch of sea salt. Place in the sage leaves (or other herbs) — use only the tender parts, not the woody stems. Sauté gently for 2–3 minutes without letting them brown or burn: the goal is to release their essential oils and aroma.
Add the walnuts and a little more salt. Stir carefully so as not to break the nuts or crush the leaves — just let the aromatic oil coat everything. Cook for a few more minutes until you smell the intense herbal aroma.
Transfer the walnuts and herbs into a ceramic or wooden bowl and let cool. The oil will absorb, the salt will cling, and the cooled sage will turn crisp. A perfect little snack, even with tea or coffee.
