
Apart from sweet cottage cheese breakfasts, there’s also a savoury alternative - salted cottage cheese spreads for toast. I must admit, the toast should be dark (made from the darkest bread) and well-toasted. This way, the dairy flavour of the cheese and herbs comes through beautifully.
Cottage cheese with herbs and pickles
Mix 250 g of cottage cheese with 2 finely chopped pickled cucumbers, add 2 pressed garlic cloves and a small bunch of chopped dill. Season with salt and pepper, mix well. If the cheese is a bit dry, add a little olive oil.
Cottage cheese with olives
The simplest spread: 250 g of cottage cheese and 1/2 can of green olives (stuffed with pepper if you like). Chop the olives and mix with the cheese. No need to add oil — the olives have enough of it, as well as salt.
Cottage cheese with herbs, garlic, and walnuts
250 g cottage cheese, 3–4 pressed garlic cloves, a mix of chopped herbs (parsley, dill, coriander), and a handful of chopped walnuts. Mix everything together.

250 g cottage cheese, 1/2 chilli pepper (deseeded and finely chopped), 1/2 tsp paprika, and optionally some fresh sweet pepper in season. Salt to taste, drizzle with olive oil if desired, and mix.

Finely chop a small amount of lightly salted salmon, chop some dill, and mix with 250 g cottage cheese. Add a little olive oil and 1/3 tsp sugar. Mix and serve with dark toast or fresh ciabatta.
