Lemon Dressing
- ½ cup olive oil
- zest of ⅓ lemon (without the white part)
- juice of 1 whole lemon
- sea salt and freshly ground black pepper
Shake in a jar and store in the refrigerator for up to 4–5 days.
Honey Dressing
- ¼ cup olive oil
- 1 tsp. fresh thyme leaves
- 1 tbsp. honey
- zest of ⅓ lemon
- juice and zest of ½ lemon
- salt and freshly ground black pepper
Honey-Mustard Dressing
- 1 tbsp. whole grain mustard
- 1 tbsp. honey
- a bit of lemon juice
- olive oil
- sea salt and freshly ground black pepper
Garlic-Yogurt Dressing
- 3 tbsp. yogurt
- juice of 1 lemon
- olive oil
- sea salt
- 2 garlic cloves, minced
- a generous handful of grated Parmesan
Basil Dressing
- 2 garlic cloves
- a bunch of fresh green basil, chopped
- toasted peanuts, almonds, pine nuts, or sesame seeds
- olive oil
- dalsamic vinegar
- sea salt and freshly ground black pepper
Pumpkin Seed Dressing
- 100 g pumpkin seeds (toasted or dry-toasted in a pan)
- 2 garlic cloves
- 1 cm piece of ginger root
- 1 tbsp. maple syrup or another liquid sweetener
- 3 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- 3 tbsp. lemon juice
- 175 ml water
- salt, black, and red pepper to taste
Blend all ingredients in a blender until smooth.
