
I don't really like sweet, so I often cook something familiar in an unsweetened form.
Ingredients (option 1):
- a portion of cottage cheese (preferably homemade)
- 3–4 sprigs of basil
- ½ sprig of rosemary
- green olives
- sea salt and freshly ground black pepper
Finely chop the basil and rosemary, and roughly chop the olives (black olives work too). Mix everything into the cottage cheese, season with salt and pepper, and stir well.
Ingredients (option 2):
- a portion of cottage cheese
- a few sprigs of dill
- ½ pickled cucumber
- olive oil
- sea salt and freshly ground black pepper
Chop everything finely and mix with the cheese. Serve as a spread on bruschetta or toasted bread.
Ingredients (option 3):
- cottage cheese
- tarragon
- cilantro
- green garlic tops
- 1 clove garlic
- parsley
- green onion
- salt and pepper
Combine the cheese with a generous amount of finely chopped herbs. If the cheese is dry, add a little sour cream. This version is less like breakfast and more like a great appetizer with fresh bread.
