A quick dinner with just 5 minutes of preparation is exactly what we often need at the end of a long day. Two or three types of vegetables paired with a delicious, nutritious fish steak make the perfect choice for anyone — and will certainly satisfy even the most dedicated nutrition experts.

With this post, I’m bringing back the joy of cooking with fish, featuring recipes in collaboration with EASYFISH.

Fish and vegetables are one of the safest and healthiest combinations for any meal, even a late dinner. The protein and fat components provide long-lasting satiety, help stabilize blood sugar levels, and allow for portion sizes tailored to your appetite. As long as sugars or simple carbohydrates are kept out of the meal, this pairing is a digestive system’s best friend.

I personally recommend wild salmon or, as in this example, keta salmon. Wild fish are more active and have firmer flesh due to their natural diet and movement. Salmon is naturally rich in a creamy flavor with vibrant-colored fillets. A 100 g serving provides up to 80% of the daily vitamin B12 requirement, along with some iron, potassium, and 350–500 mg of Omega-3 DHA.

This dish requires only 5 minutes of prep, one tray, and an oven. Thanks to the high fat content in fish, freezing doesn’t negatively affect its taste or properties. Just remember that safe defrosting is key: thaw in advance in the refrigerator, not at room temperature.

Ingredients
  • 1-2 steaks of wild salmon (e.g., keta salmon)
  • 1/3 bulb of fennel or celery stalk
  • 4-5 cherry tomatoes
  • leeks or sweet white onion
  • optional additions: potato slices or parsley root
  • sea salt
  • olive oil

Thaw the fish in advance. Slice the fennel, cherry tomatoes, and leek in halves. Arrange the fish and vegetables on a parchment-lined baking tray, season with sea salt, and drizzle with olive oil.

Bake at 190°C for 15 minutes.
