Fresh, high-quality meat doesn’t need complicated marinades, and a perfectly cooked steak requires no sauces. Here are two simple recipes with aromatic herbs.

First option:
- Pork (cut into 2 cm-thick steaks)
- Olive oil
- Mustard
- Tarragon
Second option (my favorite):
- Pork (2 cm steaks)
- Olive oil
- Chili
- Pepper
- Mint
- Sage
Instructions:
- For the first option, mix mustard and olive oil (50/50), add chopped tarragon. Rub the mixture onto the meat and let it rest while the grill or pan heats up.
- For the second option, make a paste from minced chili, mint, sage, and olive oil. Coat the steaks with it.
Cook on hot coals for about 7 minutes per side (slightly longer in a pan).
Salt only at the end. Let the meat "rest" for 2-3 minutes after cooking (don’t place it on a cold plate) to allow the juices to redistribute.
