This is a great way to turn grilled vegetables into a more filling and satisfying meal. It’s incredibly simple, and variations are more than welcome. This is one of those cases where culinary simplicity brings real joy.

  • Tomatoes
  • Sweet pepper
  • Eggplant
  • Sweet onion (required)
  • Slices of bread for toast
  • Hard cheese
  • Mayonnaise or mustard (optional)
  • Sausages or sausages (optional)
  • Greens, mushrooms or other additives to your taste

Start by preparing the grilled vegetables: slice the tomatoes, eggplant, bell pepper, and sweet onion, lightly brush with oil, and grill until soft and nicely browned. Toast your bread slices on both sides. Place a thin slice of cheese on one piece of bread, then layer the grilled veggies on top. If you’d like, add sautéed sausages or frankfurters, and a bit of mayonnaise or mustard. Sprinkle with herbs or add mushrooms if desired. Top with another slice of bread—and enjoy!
