
Shavuot is a holiday traditionally celebrated with dairy dishes — cheesecakes, blintzes with honey, fruit, and sweet cream. This classic cheesecake is one of the highlights: delicate, light, and festive.
- 750 g farmer's cheese (or well-drained ricotta)
- 1 small tub of sour cream
- 4 tbsp starch (corn or potato)
- 1 packet vanilla pudding powder
- 5 eggs (separated)
- ¾ cup sugar
- 1 cup heavy cream
- ½ cup powdered sugar
Mix the cheese with sour cream, starch, pudding powder, and egg yolks until smooth and creamy. Beat the egg whites with sugar until stiff peaks form. Gently fold the whites into the cheese mixture, stirring carefully in circular motions to keep it airy. Pour into a baking pan and bake for 50 minutes at 180°C (350°F). Once baked, turn off the oven and let the cake cool inside for another hour without opening the door.
