Dough for 25 cm mold
- 2 cups flour
- 1/2 cup sugar
- 1/2 tsp salt
- 200 g butter
- 2 small eggs
For the filling:
- 500 g berries (blueberries, raspberries, strawberries, cherries or a mix)
- 2-3 tsp. cornstarch
- water
For the dough, mix all the ingredients in a food processor or blender. Beforehand, cut the butter into small cubes. The dough should feel a bit greasy and crumbly, and then you can chill it in the fridge for a bit.
For the filling, gently cook the berries in some water, adding cornstarch little by little until the mixture thickens. Once it cools down, roll out the dough thinly and place it into your pie dish. Pour in the berry mixture, and if you like, you can add some fresh fruit on top for extra flavor. Then, bake it at 190°C (375°F) until the pie turns golden brown.
