
For our berry week – here’s a berry recipe. Of course, the strawberries should be perfectly ripe, juicy, and sweet. A scoop of ice cream at the end isn’t essential, but for those who love the classic “strawberries with cream,” it’s a great addition. The creaminess fits in beautifully here.
It’s best to use chilled strawberries. Wash them, remove the stems, and blend together with the sugar, wine, and mint. Don’t skip the step of straining the puree through a fine sieve – it makes all the difference.
Serve with a scoop of ice cream. I highly recommend adding a few fresh mint leaves on top. Later in the peak of the season, you can enrich this “gazpacho” with raspberries, nectarine, or mango.
