One of the most popular, simple, and incredibly delicious tagine recipes. For me, finding a perfect chicken recipe can be challenging. Olives, preserved lemons, and saffron — all contribute to an authentic taste and amazing aroma.

Ingredients
  • 4–5 chicken drumsticks or 2–3 thighs
  • sea salt
  • olive oil
  • 30 ml vinegar (preferably white wine or rice vinegar)
  • a small handful of fresh cilantro (can be substituted with 2 tbsp. dried coriander)
  • 1 tsp. cinnamon
  • a pinch of saffron
  • 1 small onion
  • 8–10 garlic cloves
  • 1.5 tsp. ground cumin
  • 1 tsp. dried ginger
  • 1 preserved lemon
  • glass of water
  • a large handful of green or pink olives

Start by marinating the chicken. Rub it with salt, then mix 200 ml of water, 30 ml of vinegar, finely chopped onion, herbs, and all the spices (except the preserved lemons) in a bowl. Add the chicken to this mixture, ensuring it is well coated, and let it marinate for at least 15 minutes.

Transfer the chicken along with the marinade into a tagine pot or a heavy-bottomed pan placed over medium heat. Arrange the olives on top of the chicken. Scoop out the pulp from the preserved lemon and lay the peel on top.

Cover the dish with a lid and cook on low heat until the chicken becomes tender and the flavors meld beautifully, about 45 minutes.

The result is soft, aromatic chicken infused with the rich flavors of spices, olives, and lemon, accompanied by a delightful golden sauce. This recipe is a must-try!
