
Out of all cold desserts, granita is the simplest. Closely followed by sorbets, which are slightly softer, granita is essentially a fruit ice — a blend of fruit purée and syrup, frozen and served as icy flakes. It’s a classic Sicilian dish, traditionally made with seasonal fruits and berries.
- 300 g of berries of your choice (blueberries, currants, gooseberries, blackberries, wild strawberries, raspberries, or any other fragrant berries)
- 5 tbsp sugar (adjust depending on how sweet you want the dessert)
- 1 cup water
- Juice of half a lemon (use a whole lemon if it’s small)
Blend the berries until smooth. In a separate saucepan, combine the water, sugar, and lemon juice. Heat gently while stirring, just until the sugar has fully dissolved — it shouldn't come to a full boil. Let the syrup cool slightly.
Thoroughly mix the syrup with the berry purée, then pour the mixture into a plastic container and place it in the freezer. During the first 2–3 hours of freezing, stir the mixture every 30 minutes to prevent it from freezing into a solid block of ice.
About 10 minutes before serving, remove the container from the freezer. Use a spoon to scrape the ice (or a knife, or a blender if it’s powerful enough), and portion it into glasses.
You can also experiment with flavor variations — try adding orange, chocolate, or mint to the base.
