The secret of Oliver’s recipes is that they’re very simple. Or if not very simple, then very clear — which means they’re still worth trying. Here's another apple pie. I feel like the number of apple pie recipes is endless. Especially in British cuisine. This one is easy to make and tastes great.

Ingredients
  • 250 g flour
  • 50 g of sugar
  • salt
  • 1 lemon
  • 125 g butter
  • 1 egg
  • a little milk
  • 5 apples, peeled
  • 3 tbsp sugar
  • 1/2 tsp. grated ginger
  • a handful of raisins
  • 1/2 lemon

Preheat the oven to 180°C. In a bowl, mix the flour with salt and sugar, then grate in the lemon zest.

Cut the butter into cubes and add it to the flour. Gently rub together with your hands until the mixture resembles breadcrumbs.

Add the egg and a little milk (about 25–30 ml). Form the dough into a ball and chill it in the fridge.

Meanwhile, prepare the filling.
Peel and core the apples, then cut them into 6–8 slices. Place them in a saucepan, add the grated ginger and sugar. Add the raisins, zest half a lemon, and pour in a bit of water. Cook over medium heat for about 5–7 minutes, just until the apples start to soften. Remove from heat.

Divide the dough into two parts. Roll out one part and place it into a pie dish.
Spoon in the apple filling.

In a small bowl, beat the egg yolk with a splash of milk. Roll out the second part of the dough and cover the pie. Press the edges tightly together.
Brush the top with the egg and milk mixture.
Use a knife to make a small slit in the center.

Bake for 40–50 minutes, until golden brown.
