Of course, porridge is perfect in winter as a warming hot option. But I also love it in summer, as a cold pudding simply soaked. Grain-free, gluten-free, sugar-free, keto and paleo-friendly porridge. In any version, it keeps you full for a long time, doesn’t spike blood sugar, provides a good level of energy. It is simply delicious) Toasted sesame and flaxseed pudding with coconut or almond milk is the perfect start to the day. It pairs wonderfully with any red or black berries or kiwi.
- 30 g flaxseed
- 15 g sesame seeds
- 100 ml of coconut milk+100 ml of water (can be replaced with almond or any other nut milk)
- sea salt
- black berries or unsweetened fruit of your choice
Quickly toast the sesame seeds in a dry pan until fragrant. Mix with flaxseed and grind in a blender to a fine crumb. Pour in the coconut milk + water and add a pinch of salt. There’s no need for added sweeteners; the richness of the coconut milk will provide a natural sweetness. Cold version — let the pudding sit in the refrigerator overnight, and in the morning, serve it with berries, kiwi, and cacao nibs. Hot version — simmer the flax and sesame crumb with water and milk for 5–10 minutes until thickened.
