An excellent and very simple recipe with a minimum of non-useful ingredients. A little sugar and flour, a little soft butter and oatmeal fertilized with seeds, zest, nuts and any superfood. Quickly prepare the dough, bake quickly and very tasty to eat. The cookies are very oatmeal, very crispy and incredibly tender.

Ingredients
  • 160 g oat flakes
  • 125 g flour
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • pinch of salt
  • 100 g brown sugar (can be replaced with stevia or agave syrup or maple)
  • 125 g butter
  • 1 egg
  • seeds 0.5 vanilla pod (optional)
  • 1 tbsp flax or chia seeds, a handful of sunflower seeds or dried cranberries (orange peel, raisins, nuts...)

Preheat the oven to 180C. Mix flour, oatmeal with baking powder, soda and salt. Add sugar or other sweetener. Introduce softened to room temperature butter. Add lightly beaten egg and vanilla. Mix all ingredients thoroughly. Cover the baking sheet with parchment paper. Roll the balls out of the dough with your hands and put them on a sheet, pressing a little, forming cookies. Bake for about 15 — 20 minutes, until browned. Be sure to let cool. The cookie will be crispy the next day, although it is unlikely to live to it - it will be eaten immediately.
