The world of breakfast is always exciting. Here’s a fresh and elegant idea — and even more valuable is the presentation. I spotted this style in the book “Working the Plate” — more on that soon.
- soft goat cheese (can be replaced with low-fat cottage cheese)
- herbs to your taste (fragrant — basil, dill, parsley, cilantro, green onions)
- 1 clove of garlic (you can do without it, if the meeting is ahead:)
- 1 orange (can be replaced with grapefruit)
- balsamic sauce
- white bread toast
Mix the goat cheese with chopped herbs and press in the garlic (if using). Since we’re talking about presentation — use a spoon or small ladle to place the cheese nicely on a large plate.
Slice the orange into wedges. If you’ve zested it earlier — the zest makes a beautiful garnish. Add a few decorative dots of balsamic glaze.
Toast the bread slices.
You can serve them as ready-made bruschetta, or simply spread cheese on toast piece by piece, enjoying with citrus in between. And yes — best served with coffee:)
