A seasonal and refreshing summer soup to add variety to gazpacho.
Ingredients
- 2 avocados
- 2 cucumbers
- a large bunch of spinach or a handful of Swiss chard
- 5–10 sprigs of mint, leaves only
- a pinch of salt
- flax seeds
- optional (if no meetings or work ahead) — 1 clove of garlic
- toppings: tahini, sprouts, diced daikon, tofu of choice, shrimp, or slow-cooked chicken

I love this as a cold vegan soup. Blend all ingredients with 100 ml of water and an ice cube. For toppings, I prefer either nothing at all or a handful of pumpkin seeds, maybe some silken tofu. Summer in a bowl!
