A seasonal and refreshing summer soup to add variety to gazpacho.

Ingredients
  • 2 avocados
  • 2 cucumbers
  • a large bunch of spinach or a handful of Swiss chard
  • 5–10 sprigs of mint, leaves only
  • a pinch of salt
  • flax seeds
  • optional (if no meetings or work ahead) — 1 clove of garlic
  • toppings: tahini, sprouts, diced daikon, tofu of choice, shrimp, or slow-cooked chicken

I love this as a cold vegan soup. Blend all ingredients with 100 ml of water and an ice cube. For toppings, I prefer either nothing at all or a handful of pumpkin seeds, maybe some silken tofu. Summer in a bowl!
